Culinary Entrepreneurs Open Pop Up Restaurant

Austin January and Noah Rosen, 17-year old juniors in the culinary arts and hospitality conservatory of the Orange County School of the Arts in Santa Ana, are seeing their dream realized in a “pop-up” restaurant they call Class kitchen.

The pop up trend allows young chefs without a restaurant of their own to exhibit their talents in an existing location.

At Waffleholic, 1661 Superior Ave. in Costa Mesa, their Class kitchen will be offering evening dining from 5:30 -10 p.m. on 10 Fridays and Saturdays beginning June 26 and running through Aug. 15 with the exception of the first weekend of both months.

Featuring a modern American, four-course prix fixe dinner, the Class kitchen menu will offer dishes such as mushroom risotto with fried Brussels sprout leaves, tomato and strawberry salad, sous vide salmon and maple bread pudding with candied bacon, Rosen’s favorite food.

Rosen, of Laguna Beach, and January staffed their pop-up with other OCSA students and described it on a recent KX 93.5 show. From logo to website to BBQ sauce, everything is student created. They are generating working capital by pre-selling dinner tickets and sponsor options with a Kickstarter campaign. RSVP on their website: www.classkitchen.info.
