Partner Chefs Announce New Eatery
Chef Amar Santana, owner of Broadway in Laguna Beach, and his partner Ahmed Labbate, have acquired a 2,750 square foot space, in Costa Mesa’s Park Towers for their new restaurant, Vaca.
“Spanish food is influenced by the cultures that have invaded and mixed with the indigenous cuisine. Our goal goes far beyond paella and bocadillos. We will bring Barcelona, Madrid, Andalucía, Sevilla and the Basque to Orange County – just as Broadway has reinterpreted food and drink in Laguna,” said Santana.
Due to open next summer, Vaca will specialize in grass-fed Argentinian beef and Kobe beef. Labbate will oversee operations and facilities development.
